I dont know about the other guys, but when having
Mark "dont call me Marky" Lennon:) over for dinner,
serve Ceviche. A Mexican/Costa Rican favorite of ours.
Sushi is good too, but thatīs a whole different kettle of fish. hehehe


Hereīs my killer recipe. (served as a starter) Serves 8-10

Ingredients

1 kg. light fish (bass, snapper, cod, etc.)
1 large or 2 small tomatos
1 medium onion (any type)
1 or 2 red or green hot chile(how spicey?)
1 bunch fresh coriander (cilantro in USA)
8-12 limes
Salt & Pepper
1 clove garlic (optional)

Cube fish to the size of a sugar cube or a bit larger.
Finely chop tomato, onion and chile.
Roughly chop coriander. (leaves only)
Mix ingredients into glass or masonry bowl.(pressed garlic now)
Sqeeze lime juice into mixture until the juice is level or just
above mixture.
Stir, cover and refrigerate for not less than 4 hours. 8-12 is best.
Stir occasionally.
Before serving, add a little salt and pepper to taste.

Serve with tortilla chips or thin toast. Great in the summer with
a cold beer or dry white wine.

Warning: When using Cod, check with your fish monger about seasons.
Also good with shrimp, lobster, scallops, etc. ENJOY

Sounds very nice, but mostly it tastes much better when someone else makes it, so maybe it's an option to serve it to all the Dutch fans on the fanmeeting (if there's gonna be one this year) and then you also have a great stay again in Holland for a few days.:D
